Many won’t have think of turning a rotting Greyhound bus into a mobile restaurant, but Kai Schoenhals did. Kai Schoenhals who is a restaurateur was inspired by the mobile operations like Napa Wine Train; with his chef-partner Daniel Isberg refitted this 1957 GMC as a fully featured eatery.
Nicknamed as Diamond Lil, after Kai Schoenhal’s grandmother, the 1957 GMC Coach born into life as a Greyhound, then converted into a mobile home and escaped a miserable existence when duo rescued her in Hatch, Utah.
Unlike Napa Wine Train, this bus wasn’t confined to tracks only but could roam. Thus, this bus becomes an embodiment of a restaurant scene which is reinventing itself while moving away from traditional white-tablecloth restaurants to more alternative forms of dining.
This bus which has a kitchen inside with the dining in and around is environment friendly as it runs on bio-fuel and uses cooking oil from restaurant. Also, the interior of the bus is made of recycled materials, such as rubber and paper.
